Traditional Polish sausage producers have accused the Minister of Agriculture of not understanding the smoking process. More than a hundred representatives of the Committee for the Defence of Traditionally Smoked Products in correspondence with Minister Stanisław Kalemba vented their outrage in relation to regulations determining the amount of benzopyrene in sausages. These norms mean that producers will not be able to smoke meats over a real fire. In the letter, butchers have accused the minister of not being competence and have called for action. “We want to put a stop to the introduction of these new norms and will not give up,” Stanisław Mądry says. Producers and butchers want to meet the minister and deputies during a session of the parliamentary agriculture committee. They also wrote: “Unfortunately, we think that you do not see the problem and do not fully understand what exactly traditionally smoking means. Telling us we are not able to smoke meat is ridiculous. What exactly do you want to teach us? Most of us have been smoking meats for decades and learned the craft from our fathers and grandfathers,” wrote butchers from Małopolska and Podkarpacie Provinces. The new regulations will come into force in September.
